- 2 ripe plantains
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1/2 cup cheese, shredded
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Preheat the oven to 375°F (190°C).
- Slice the plantains in half lengthwise and scoop out some flesh to create cups.
- In a pan, cook the turkey bacon until crispy, then remove and chop.
- In the same pan, sauté onion and garlic in olive oil until fragrant.
- Add diced chicken ham and cooked turkey bacon to the pan.
- Fill each plantain cup with the mixture and top with shredded cheese.
- Bake in the oven for 15-20 minutes, until the cheese is melted and golden.
