Stuffed plantain cups

Stuffed plantain cups are a delightful and easy-to-make dish featuring turkey bacon and chicken ham.

Ingredients

  • 2 ripe plantains
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1/2 cup cheese, shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the plantains in half lengthwise and scoop out some flesh to create cups.
  3. In a pan, cook the turkey bacon until crispy, then remove and chop.
  4. In the same pan, sauté onion and garlic in olive oil until fragrant.
  5. Add diced chicken ham and cooked turkey bacon to the pan.
  6. Fill each plantain cup with the mixture and top with shredded cheese.
  7. Bake in the oven for 15-20 minutes, until the cheese is melted and golden.

Notes

  • For extra flavor, add your choice of spices.
