Seriously Soft Molasses Cookies

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup molasses
  • 1 large egg
  • ½ cup granulated sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, and spices.
  3. In a separate bowl, cream together the butter and brown sugar until fluffy.
  4. Add molasses and egg to the butter mixture, mixing until combined.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Roll dough into balls and coat in granulated sugar.
  7. Place on a lined baking sheet and bake for 8-10 minutes.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
