  • 4 ears corn, husked
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Cook the turkey bacon in a skillet until crispy, then chop it into small pieces.
  2. Grill the corn on medium-high heat until slightly charred, about 10 minutes. Let cool and cut the kernels off the cob.
  3. In a large bowl, combine corn kernels, cherry tomatoes, red onion, cilantro, and feta cheese.
  4. Add the mayonnaise, lime juice, chili powder, and salt to the bowl; mix until well combined.
  5. Fold in the chopped turkey bacon.
  6. Chill the salad for at least 30 minutes before serving.
