White Beans and Barley Soup

A comforting and hearty soup packed with white beans and barley, perfect for chilly days.

Ingredients

  • 1 cup white beans
  • 1/2 cup pearl barley
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until softened.
  2. Add garlic, thyme, and black pepper; cook for another 1-2 minutes.
  3. Stir in the white beans and pearl barley, followed by the vegetable broth.
  4. Bring to a boil, then reduce heat and let simmer for about 45 minutes or until barley and beans are tender.
  5. Add salt to taste before serving.
