Veggie Fajitas

Delicious and simple veggie fajitas that the whole family will love. Perfect for busy weeknights!

Ingredients

  • 1 tablespoon olive oil
  • 1 bell pepper
  • 1 onion
  • 2 cloves of garlic
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 small tortillas

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add sliced bell pepper and onion, sauté for 5-7 minutes until softened.
  3. Add minced garlic, chili powder, cumin, paprika, salt, and pepper. Stir and cook for another 2 minutes.
  4. Warm the tortillas in another pan or microwave.
  5. Fill tortillas with the veggie mixture and serve.
