- 4 medium sweet potatoes
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 cup diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- Preheat the oven to 425°F (220°C).
- Wash the sweet potatoes and prick them with a fork.
- Bake sweet potatoes for 45-50 minutes until fork-tender.
- In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
- Add cumin, smoked paprika, black beans, corn, diced tomatoes, salt, and pepper. Cook for 5-7 minutes until heated through.
- Once sweet potatoes are done, slice them lengthwise and fluff the insides with a fork.
- Stuff the sweet potatoes with the taco mixture.
- Top with avocado slices and fresh cilantro before serving.
