Vegan Taco Stuffed Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 cup diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the sweet potatoes and prick them with a fork.
  3. Bake sweet potatoes for 45-50 minutes until fork-tender.
  4. In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  5. Add cumin, smoked paprika, black beans, corn, diced tomatoes, salt, and pepper. Cook for 5-7 minutes until heated through.
  6. Once sweet potatoes are done, slice them lengthwise and fluff the insides with a fork.
  7. Stuff the sweet potatoes with the taco mixture.
  8. Top with avocado slices and fresh cilantro before serving.
