Vegan Lentil Mushroom Stew

A delicious vegan stew loaded with lentils and mushrooms, perfect for a comforting meal.

Ingredients

  • 1 cup lentils
  • 8 ounces mushrooms, sliced
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery, and sauté until softened.
  3. Stir in garlic, mushrooms, thyme, and paprika, cooking until mushrooms are tender.
  4. Add lentils and vegetable broth, bringing to a boil.
  5. Reduce heat and simmer for 30-40 minutes until lentils are cooked.
  6. Season with salt and pepper to taste.
