Tuscan White Bean Soup

Ingredients

  • 1 cup dried cannellini beans
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups fresh spinach

Instructions

  1. Rinse and soak the cannellini beans overnight.
  2. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery; sauté until soft.
  3. Add the soaked beans, vegetable broth, thyme, rosemary, salt, and pepper.
