Tomato Soup with Roasted Red Peppers

  • 1 cup roasted red peppers
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add chopped tomatoes and roasted red peppers. Cook for about 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. Blend the soup until smooth. Return to heat, season with salt and pepper.
