Tomato and Carrot Soup

A comforting and healthy tomato and carrot soup, perfect for warming up on chilly days.

Ingredients

  • 4 large tomatoes
  • 2 medium carrots
  • 1 medium onion
  • 2 cloves garlic
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add diced onion and garlic, sauté until translucent.
  3. Add chopped carrots and cook for a few minutes.
  4. Add chopped tomatoes and vegetable broth, bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Use an immersion blender to blend the soup until smooth.
  7. Stir in salt, pepper, thyme, and lemon juice before serving.

Notes

  • For added creaminess, you can stir in some cream or coconut milk before serving.
