Tofu Scramble with Spinach & Bell Peppers

  • 1 block firm tofu
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 2 cups spinach, fresh
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess moisture and crumble it into a bowl.
  2. Heat olive oil in a skillet over medium heat.
  3. Add diced bell pepper and sauté until soft.
  4. Add crumbled tofu and stir well.
  5. Mix in spinach, turmeric, garlic powder, salt, and pepper.
  6. Cook for about 5-7 minutes until heated through and spinach wilts.

Notes

  • For added flavor, consider adding nutritional yeast.
  • Serve with whole-grain toast for a complete meal.
