- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup milk
- 1 cup brewed coffee, cooled
- 8 oz mascarpone cheese
- 1/2 cup heavy cream
- 2 tablespoons coffee liqueur
- 2 tablespoons cocoa powder for dusting
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, mix flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, cream together butter and sugar until fluffy. Add eggs and vanilla, mixing well.
- Alternate adding the dry ingredients and milk to the creamed mixture, starting and ending with the dry ingredients.
- Fill each cupcake liner with batter and bake for 18-20 minutes. Let cool.
- In a separate bowl, whisk mascarpone cheese and heavy cream together until thick.
- Add coffee liqueur and stir to combine.
- Once cupcakes are cool, soak each with brewed coffee using a brush.
- Top each cupcake with the mascarpone mixture and dust with cocoa powder.
Notes
- For a stronger coffee flavor, increase the amount of coffee liqueur.
