  • 4 large russet potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the russet potatoes.
  3. Bake the potatoes for 45 minutes or until tender.
  4. While the potatoes are baking, cook the ground beef in a skillet until browned.
  5. Add the taco seasoning to the beef and stir according to packet instructions.
  6. Once the potatoes are cooked, slice them open and fluff the insides with a fork.
  7. Top the potatoes with the seasoned beef, cheese, sour cream, tomatoes, and green onions.
  8. Return to the oven for an additional 5-10 minutes, or until the cheese is melted.
