  • 4 large potatoes
  • 1 cup shredded cheese
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1/2 cup chicken ham, diced
  • 1/4 cup sour cream
  • 2 tablespoons taco seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then coat with olive oil, salt, and pepper.
  3. Bake the potatoes for 45 minutes or until tender.
  4. In a skillet, cook turkey bacon until crispy, then add diced chicken ham and taco seasoning.
  5. Once the potatoes are done, cut them in half and scoop out some of the flesh.
  6. Mix the scooped potato with cheese, sour cream, and the bacon-ham mixture.
  7. Stuff the mixture back into the potato skins and top with more cheese.
  8. Return to the oven for an additional 10 minutes until the cheese is melted.

  • For a vegetarian option, substitute turkey bacon with mushrooms.
