Spicy Butternut Squash Sweet Potato Soup

A hearty and flavorful soup combining the sweetness of butternut squash and sweet potatoes with the savory taste of turkey bacon.

  • 1 medium butternut squash, peeled and cubed
  • 1 large sweet potato, peeled and diced
  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • ½ teaspoon cayenne pepper
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped turkey bacon and cook until crispy.
  3. Remove the bacon and set aside, leaving the drippings in the pot.
  4. Add the onion and garlic, and sauté until the onion is translucent.
  5. Add the butternut squash and sweet potato; sauté for another 5 minutes.
  6. Stir in the ground cumin and cayenne pepper.
  7. Pour in the vegetable broth and bring to a boil.
  8. Reduce heat, cover, and let simmer for about 20-25 minutes, or until the vegetables are tender.
  9. Using an immersion blender, puree the soup until smooth.
  10. Season with salt and black pepper to taste.
  11. Serve hot, garnished with crispy turkey bacon.

Notes

  • For a creamier texture, add a splash of coconut milk while blending.
  • This soup can be frozen for up to 3 months.
