Sourdough Discard Breakfast Pockets Recipe

A delightful and easy recipe for breakfast pockets made with sourdough discard and filled with turkey bacon.

  • 1 cup sourdough discard
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 tablespoons olive oil
  • 4 slices turkey bacon, cooked and chopped
  • 1/2 cup shredded cheese
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together sourdough discard, flour, salt, baking powder, and olive oil until a dough forms.
  3. Roll out the dough on a floured surface into a rectangle.
  4. Cut the dough into squares and place a portion of turkey bacon and cheese in the center of each square.
  5. Fold the squares into triangles and seal the edges with a fork.
  6. Brush the tops with beaten egg.
  7. Bake for 15-20 minutes or until golden brown.

Notes

  • For a vegetarian option, substitute turkey bacon with sautéed vegetables.
