Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cans diced tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon chipotle in adobo, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • salt and pepper to taste
  • 1/4 cup heavy cream (optional)

Instructions

  1. Heat the olive oil in a pot over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the diced tomatoes, vegetable broth, chipotle in adobo, smoked paprika, oregano, salt, and pepper to the pot.
  3. Bring the mixture to a simmer and cook for 20 minutes.
  4. Blend the soup until smooth, then return to the pot.
  5. If desired, stir in heavy cream and warm through before serving.
