Smashed Potato Salad

A delicious and creamy smashed potato salad with crispy turkey bacon, perfect for any gathering.

  • 2 pounds small potatoes
  • 4 slices turkey bacon
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 3 green onions, sliced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool.
  2. While the potatoes cool, cook the turkey bacon in a skillet until crispy. Chop into small pieces.
  3. In a large bowl, mix together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper.
  4. Once the potatoes are cool, roughly smash them with a fork or potato masher.
  5. Fold the smashed potatoes into the dressing mixture.
  6. Add the chopped turkey bacon and green onions. Stir gently to combine.
  7. Serve chilled and enjoy!
