  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup oats (for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix together the flour, sugars, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, vegetable oil, egg, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the diced apples gently.
  6. Scoop the batter into the muffin cups, filling each about 2/3 full.
  7. In a small bowl, mix the oats with melted butter and sprinkle on top of the muffins.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let them cool before serving.
