  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. Heat olive oil in a pan over medium-high heat.
  2. Add chicken and sear on both sides until browned.
  3. Transfer chicken to the slow cooker.
  4. Add diced vegetables, onion, garlic, chicken broth, thyme, salt, pepper, and bay leaf.
