Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large carrots, sliced
  • 4 large potatoes, diced
  • 6 hamburger buns, for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat. Brown the beef on all sides.
  2. Transfer the browned beef to the slow cooker.
  3. Add onion, garlic, beef broth, Worcestershire, thyme, salt, and pepper.
  4. Top with carrots and potatoes.
  5. Cover and cook on low for 8 hours, or until the beef is tender.
  6. Shred the beef with two forks and serve on hamburger buns.
