- 2 boneless, skinless chicken breasts
- 1 medium zucchini
- 1 medium yellow squash
- 2 tablespoons olive oil
- 1 lemon, juiced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with garlic powder, salt, and pepper.
- Add chicken to the skillet and cook until browned, about 6-7 minutes per side.
- Remove chicken and set aside.
- Add zucchini and squash to the skillet and sauté for 4-5 minutes.
- Return chicken to the skillet and pour lemon juice over top.
