Skillet Lemon Parmesan Chicken Zucchini and Squash

A delicious and easy recipe for Skillet Lemon Parmesan Chicken with Zucchini and Squash.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 medium zucchini
  • 1 medium yellow squash
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with garlic powder, salt, and pepper.
  3. Add chicken to the skillet and cook until browned, about 6-7 minutes per side.
  4. Remove chicken and set aside.
  5. Add zucchini and squash to the skillet and sauté for 4-5 minutes.
  6. Return chicken to the skillet and pour lemon juice over top.
  7. Sprinkle Parmesan cheese on top and cover until cheese melts.

Notes

  • For added flavor, marinate the chicken in lemon juice for 30 minutes before cooking.
