- 1 pound chicken breast
- 4 cups chicken broth
- 1 onion, halved
- 1 piece of ginger, sliced
- 2 star anise
- 1 cinnamon stick
- 2 tablespoons fish sauce
- 200 grams rice noodles
- 1 lime, cut into wedges
- 1 cup bean sprouts
- 1 bunch fresh cilantro
- 1 bunch green onions, sliced
- 2 chili peppers, sliced
- In a large pot, combine chicken broth, onion, ginger, star anise, and cinnamon stick. Bring to a boil.
- Add the chicken breast and simmer for about 20 minutes, or until the chicken is cooked through.
- Remove the chicken, shred it, and set aside.
- Return the broth to boiling and add rice noodles. Cook according to package instructions.
- Stir in fish sauce and adjust seasoning as needed.
- Serve the noodles in bowls, topped with shredded chicken, and garnish with lime, bean sprouts, cilantro, green onions, and chili peppers.
