Simple Chicken Pho

  • 1 pound chicken breast
  • 4 cups chicken broth
  • 1 onion, halved
  • 1 piece of ginger, sliced
  • 2 star anise
  • 1 cinnamon stick
  • 2 tablespoons fish sauce
  • 200 grams rice noodles
  • 1 lime, cut into wedges
  • 1 cup bean sprouts
  • 1 bunch fresh cilantro
  • 1 bunch green onions, sliced
  • 2 chili peppers, sliced

Instructions

  1. In a large pot, combine chicken broth, onion, ginger, star anise, and cinnamon stick. Bring to a boil.
  2. Add the chicken breast and simmer for about 20 minutes, or until the chicken is cooked through.
  3. Remove the chicken, shred it, and set aside.
  4. Return the broth to boiling and add rice noodles. Cook according to package instructions.
  5. Stir in fish sauce and adjust seasoning as needed.
  6. Serve the noodles in bowls, topped with shredded chicken, and garnish with lime, bean sprouts, cilantro, green onions, and chili peppers.

Notes

  • For added flavor, allow the broth to simmer longer with the spices.
  • You can substitute chicken with tofu for a vegetarian version.
