Simple Chicken Pho

  • 1 pound chicken thighs
  • 8 cups chicken broth
  • 1 onion, halved
  • 1 inch ginger, sliced
  • 2 star anise
  • 1 tablespoon fish sauce
  • 8 ounces rice noodles
  • 1 cilantro sprig
  • 1 lime, cut into wedges
  • 2 green onions, sliced
  • 1 jalapeño, sliced (optional)

Instructions

  1. In a large pot, combine chicken thighs, chicken broth, onion, ginger, and star anise. Bring to a boil.
  2. Reduce heat and simmer for 30 minutes.
  3. Remove chicken, shred it, and return it to the pot.
  4. Add fish sauce and rice noodles. Cook until noodles are tender.
  5. Serve hot, garnished with cilantro, lime, green onions, and jalapeño, if desired.
