- 2 pounds short ribs
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 1 can (14 ounces) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 bay leaf
- 1 tablespoon fresh basil, chopped
- In a large pot, heat olive oil over medium-high heat. Add short ribs and sear on all sides.
- Remove short ribs and set aside. In the same pot, sauté onions and garlic until translucent.
- Add beef broth, red wine, crushed tomatoes, oregano, salt, pepper, red pepper flakes, and bay leaf. Stir well.
- Return short ribs to the pot, bring to a simmer, then cover and reduce heat to low.
- Cook for 3 hours, or until short ribs are tender and fall off the bone. Remove short ribs and shred the meat, discarding bones.
- Return shredded meat to the sauce, add fresh basil, and cook for an additional 10 minutes.
Notes
- Serve with pasta, polenta, or crusty bread.
- Can be made a day ahead for better flavor.
