  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/4 cup onions, diced
  • 2 large eggs
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add olive oil and sauté the onions and bell peppers until softened.
  3. Add the spinach and cook until wilted.
  4. Push the veggies to the side and crack two eggs into the skillet. Cook to your liking.
