  • 1 1/4 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 8 ounces fresh salmon, diced
  • 1 avocado, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 green onion, sliced

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer’s instructions.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once rice is cooked, gently fold this mixture into the rice and let it cool.
  4. While the rice is cooling, prepare the salmon by mixing it with soy sauce and sesame oil.
  5. When the rice has cooled, form into small rectangular shapes.
