Roasted Tomato Basil Soup

  • 3 cups ripe tomatoes
  • 1 cup fresh basil
  • 1 medium onion
  • 4 cloves garlic
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet.
  3. Add halved onions and garlic cloves around the tomatoes.
  4. Drizzle with olive oil, salt, and pepper.
