Ricotta Pomegranate Baked Toast

  • 4 slices whole grain bread
  • 1 cup ricotta cheese
  • 1/2 cup pomegranate seeds
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix ricotta cheese, honey, vanilla extract, salt, and lemon zest until well combined.
  3. Place slices of bread on a baking sheet and toast in the oven for about 5 minutes.
  4. Remove the toasted bread from the oven, and spread a generous layer of the ricotta mixture on each slice.
  5. Top with pomegranate seeds.
  6. Return to the oven for an additional 3-5 minutes, until slightly golden and warm.
  7. Serve immediately and enjoy!
