  • 1 medium pumpkin, peeled and diced
  • 4 slices turkey bacon, chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onions and garlic to the pot and sauté until translucent.
  3. Add the diced pumpkin, salt, pepper, and nutmeg. Stir to combine.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer until the pumpkin is tender, about 20 minutes.
  6. Blend the soup until smooth, then stir in heavy cream and bacon.
