Pumpkin Chocolate Chip Ricotta Loaf

  • ½ teaspoon baking powder

  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 cup ricotta cheese
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, beat together the granulated sugar, brown sugar, ricotta, pumpkin, eggs, and vanilla.
  4. Gradually mix in the dry ingredients until just combined, then fold in the chocolate chips.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60-70 minutes, or until a toothpick comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
