Protein-Packed Sweet Potato Egg Casserole

A delicious and nutritious protein-packed recipe combining sweet potatoes, eggs, and turkey bacon.

Ingredients

  • 2 cups cooked sweet potatoes
  • 6 large eggs
  • 1 cup egg whites
  • 1 cup cooked turkey bacon, chopped
  • 1/2 cup shredded cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine sweet potatoes, eggs, egg whites, turkey bacon, cheese, salt, pepper, garlic powder, and onion powder.
  3. Pour the mixture into a greased baking dish.
  4. Bake for 30-35 minutes or until the eggs are set and the top is golden brown.
  5. Allow to cool for a few minutes before serving.

Notes

  • For added flavor, you can mix in some chopped vegetables.
