- 1 pound chicken breast
- 1 large onion, chopped
- 3 carrots, sliced
- 2 celery stalks, diced
- 5 cups chicken broth
- 2 lemons, juiced
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- In a large pot, heat a bit of oil and sauté the chopped onion until translucent.
- Add the sliced carrots and diced celery, cooking for another 5 minutes.
- Stir in the chicken breast, and cook until lightly browned.
- Pour in the chicken broth and bring to a boil.
- Reduce to a simmer, and add in the lemon juice, turmeric, cumin, and black pepper.
- Simmer for 20 minutes or until the chicken is fully cooked.
- Remove the chicken, shred it, and return to the soup.
- Stir in the chopped parsley before serving.
Notes
- This soup can be adjusted for spice by adding more or less cumin.
- For a creamier texture, consider adding a splash of coconut milk.
