Persian Lemon Chicken Soup

  • 1 pound chicken breast
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 5 cups chicken broth
  • 2 lemons, juiced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat a bit of oil and sauté the chopped onion until translucent.
  2. Add the sliced carrots and diced celery, cooking for another 5 minutes.
  3. Stir in the chicken breast, and cook until lightly browned.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce to a simmer, and add in the lemon juice, turmeric, cumin, and black pepper.
  6. Simmer for 20 minutes or until the chicken is fully cooked.
  7. Remove the chicken, shred it, and return to the soup.
  8. Stir in the chopped parsley before serving.

Notes

  • This soup can be adjusted for spice by adding more or less cumin.
  • For a creamier texture, consider adding a splash of coconut milk.
