- 2 medium zucchinis
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon Italian seasoning
- Preheat the oven to 425°F (220°C).
- Cut the zucchinis into fry shapes.
- In a bowl, mix breadcrumbs, Parmesan, garlic powder, salt, pepper, and Italian seasoning.
- In another bowl, beat the eggs.
- Dip each zucchini fry into the egg, then coat it in the breadcrumb mixture.
- Place the fries on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden and crispy.
