Parmesan Zucchini Fries

Delicious and easy to make, these Parmesan Zucchini Fries are a perfect side dish or snack!

Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the zucchinis into fry shapes.
  3. In a bowl, mix breadcrumbs, Parmesan, garlic powder, salt, pepper, and Italian seasoning.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini fry into the egg, then coat it in the breadcrumb mixture.
  6. Place the fries on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes or until golden and crispy.

Notes

  • For extra crunch, you can broil them for the last 2-3 minutes.
  • Experiment with different seasonings for varied flavors.
