Paleo Thai Shrimp Soup

This Paleo Thai Shrimp Soup is a quick and flavorful dish that will warm you up and satisfy your cravings.

Ingredients

  • 1 tablespoon coconut oil
  • 2 cups shrimp, peeled and deveined
  • 1 cup chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 lime, juiced
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 green onions, chopped

Instructions

  1. Heat the coconut oil in a large pot over medium heat.
  2. Add the shrimp and cook until they turn pink, then remove and set aside.
  3. In the same pot, add the chicken broth, coconut milk, red curry paste, and fish sauce. Stir to combine.
  4. Bring the mixture to a simmer and add the bell pepper and mushrooms. Cook until soft.
  5. Add the cooked shrimp back to the pot and finish with lime juice and green onions.
  6. Serve hot and enjoy!

Notes

  • This soup can be stored in the refrigerator for up to 3 days.
  • Adjust the spiciness by adding more or less red curry paste.
