- 4 fillets salmon
- 1 cup cherry tomatoes
- 1 cup zucchini, sliced
- 1 cup bell pepper, chopped
- 3 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 lemon, sliced
- Preheat the oven to 400°F (200°C).
- Place the salmon on a baking sheet and surround with cherry tomatoes, zucchini, and bell pepper.
- Drizzle olive oil, sprinkle oregano and garlic powder over the ingredients.
- Season with salt and pepper to taste.
- Add lemon slices on top of the salmon.
- Bake for 15-20 minutes or until the salmon flakes easily with a fork.
Notes
- For extra flavor, marinate the salmon in olive oil and herbs for 30 minutes before cooking.
