No Bake Mint Chocolate Chip Shamrock Cheesecake

Ingredients

  • 2 cups crushed chocolate cookies
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy whipping cream
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon peppermint extract
  • 1 cup mini chocolate chips
  • green food coloring (to desired color)

Instructions

  1. In a bowl, mix crushed cookies and melted butter until combined.
  2. Press the mixture into the bottom of a springform pan to form the crust.
  3. In another bowl, whip the heavy cream until peaks form.
  4. In a separate bowl, beat together cream cheese and powdered sugar until smooth.
  5. Fold the whipped cream into the cream cheese mixture gently.
  6. Add peppermint extract and food coloring, mixing until well combined.
  7. Stir in mini chocolate chips.
  8. Pour the cheesecake filling over the crust and smooth the top.
  9. Refrigerate for at least 4 hours, or until set.
  10. Once set, remove from the pan and serve chilled.

Notes

  • For an extra minty flavor, add more peppermint extract.
  • Top with additional chocolate chips for garnish.
