  • 1 cup crushed pineapple, drained

  • 2 large eggs

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas and mix in the crushed pineapple.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs and vanilla extract, mixing well.
  5. Combine the dry ingredients (flour, baking soda, and salt) in a separate bowl.
  6. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
