- 200 grams udon noodles
- 4 cups vegetable broth
- 2 tablespoons miso paste
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 150 grams mushrooms, sliced
- 1 green onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon teriyaki sauce
- Cook udon noodles according to package instructions and set aside.
- In a pot, heat sesame oil over medium heat. Add garlic, ginger, and mushrooms, and sauté until mushrooms are tender.
- Pour in vegetable broth and bring to a simmer. Stir in miso paste and soy sauce until dissolved.
- Add the cooked udon noodles and teriyaki sauce to the pot. Stir to combine and heat through.
- Serve hot, garnished with chopped green onions.
