Miso Udon Noodle Soup with Teriyaki Mushrooms

A comforting and nutritious soup made with udon noodles, miso, and savory teriyaki mushrooms.

Ingredients

  • 200 grams udon noodles
  • 4 cups vegetable broth
  • 2 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 150 grams mushrooms, sliced
  • 1 green onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon teriyaki sauce

Instructions

  1. Cook udon noodles according to package instructions and set aside.
  2. In a pot, heat sesame oil over medium heat. Add garlic, ginger, and mushrooms, and sauté until mushrooms are tender.
  3. Pour in vegetable broth and bring to a simmer. Stir in miso paste and soy sauce until dissolved.
  4. Add the cooked udon noodles and teriyaki sauce to the pot. Stir to combine and heat through.
  5. Serve hot, garnished with chopped green onions.

Notes

  • For a protein boost, add tofu or edamame.
  • This soup can be customized with your favorite vegetables.
