- 8 ounces cream cheese
- 1 cup powdered sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/2 cup graham cracker crumbs
- 2 tablespoons butter, melted
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter, then press into the bottom of mini cheesecake pans.
- In another bowl, beat the cream cheese until smooth, then add powdered sugar, lemon juice, lemon zest, and vanilla extract; mix until well combined.
