  • 1 cup powdered sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter, then press into the bottom of mini cheesecake pans.
  3. In another bowl, beat the cream cheese until smooth, then add powdered sugar, lemon juice, lemon zest, and vanilla extract; mix until well combined.
  4. Fold in sour cream gently, then pour the mixture over the crust.
  5. Bake for 15-20 minutes or until set, then let cool.
  6. Refrigerate for at least 2 hours before serving.
