Mexican-Style Tomato Soup

  • 3 garlic cloves, minced
  • 2 cans (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn kernels
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until softened.
  2. Stir in diced tomatoes, vegetable broth, cumin, chili powder, salt, and pepper. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes.
  4. Add corn and cilantro, cook for an additional 5 minutes.
  5. Blend the soup for a smoother texture if desired.
