Mediterranean Egg Muffins

Delicious and nutritious Mediterranean Egg Muffins perfect for breakfast or brunch.

  • 6 eggs
  • 1 cup chopped spinach
  • 1/2 cup diced tomatoes
  • 1/2 cup turkey bacon, chopped
  • 1/2 cup chicken ham, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, salt, and pepper.
  3. Add in the spinach, tomatoes, turkey bacon, chicken ham, and feta cheese. Mix well.
  4. Grease a muffin tin and pour the egg mixture evenly into each cup.
  5. Bake for 20-25 minutes or until the muffins are set and lightly browned.
  6. Allow to cool for a few minutes before removing from the tin.
