Ingredients

  • 4 large potatoes
  • 1 cup diced turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the onion and garlic to the pot and sauté until softened.
  3. Peel and dice the potatoes, then add them to the pot along with the chicken broth.
  4. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
