  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1/4 teaspoon salt
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, lemon zest, and lemon juice, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in the raspberries.
  7. Drop tablespoon-sized dollops of dough onto a lined baking sheet.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra citrusy flavor, consider adding a glaze made of powdered sugar and lemon juice.
  • These cookies can also be made with frozen raspberries; just be sure to thaw and drain them well first.
