  • 4 pieces chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon lemon zest
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • 1 pound baby potatoes, halved
  • 2 cups broccoli florets
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, lemon zest, lemon juice, oregano, salt, and pepper.
  3. Add chicken thighs to the marinade and let sit for at least 30 minutes.
  4. On a sheet pan, arrange the chicken, potatoes, and broccoli.
  5. Drizzle with remaining marinade and toss to coat.
  6. Bake for 30-35 minutes or until the chicken is cooked through and potatoes are tender.
  7. Serve warm.
