Lemon Crumb Bars – Buttery, Bright & Easy to Make

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup lemon juice
  • 2 large eggs
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, butter, sugar, and salt until crumbly.
  3. Press half of the mixture into the bottom of a greased baking dish.
  4. In another bowl, whisk together lemon juice, eggs, and lemon zest. Pour over the crust.
  5. Sprinkle the remaining crumb mixture on top of the lemon layer.
  6. Bake for 25-30 minutes until set and golden.
  7. Allow to cool before slicing into bars.

Notes

  • For a sweeter taste, add more sugar to the lemon mixture.
  • Enjoy with powdered sugar on top for extra sweetness.
