- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 cup pasta (e.g. ditalini)
- 2 cups fresh spinach
- In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Shape into meatballs.
- In a large pot, heat olive oil over medium heat. Sauté onions, carrots, and celery until softened.
- Add chicken broth and diced tomatoes to the pot and bring to a boil.
- Drop meatballs into the boiling soup. Reduce heat and let simmer for about 20 minutes.
- Add pasta and cook according to package instructions.
- Stir in fresh spinach just before serving.
