  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup pasta (e.g. ditalini)
  • 2 cups fresh spinach

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Shape into meatballs.
  2. In a large pot, heat olive oil over medium heat. Sauté onions, carrots, and celery until softened.
  3. Add chicken broth and diced tomatoes to the pot and bring to a boil.
  4. Drop meatballs into the boiling soup. Reduce heat and let simmer for about 20 minutes.
  5. Add pasta and cook according to package instructions.
  6. Stir in fresh spinach just before serving.

Notes

  • This soup can be made ahead of time and reheated.
  • Add more vegetables like zucchini or bell peppers for added nutrition.
