Hobak Jeon: Easy and Delicious Korean Zucchini Pancakes at Home

  • 2 medium zucchinis
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup water
  • 1 egg
  • 1/4 cup green onions, chopped
  • 1/4 teaspoon ground black pepper
  • vegetable oil for frying

Instructions

  1. Grate the zucchinis and place them in a bowl. Sprinkle with salt and let them sit for about 10 minutes to draw out moisture.
  2. In a separate bowl, mix together the flour, water, egg, green onions, and pepper until well combined.
  3. Squeeze excess moisture from the zucchini and add it to the batter. Stir until everything is mixed thoroughly.
  4. Heat a non-stick skillet over medium heat and add a bit of vegetable oil.
  5. Pour about 1/4 cup of the batter for each pancake and flatten gently. Cook for 3-4 minutes on each side until golden brown.
  6. Transfer cooked pancakes to a paper towel-lined plate to absorb excess oil. Repeat until all batter is used.
  7. Serve hot with a dipping sauce of your choice.

Notes

  • For extra flavor, consider adding minced garlic or chopped bell peppers to the batter.
  • Hobak Jeon can be enjoyed as a side dish or a main vegetarian meal.
