- 2 medium zucchinis
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup water
- 1 egg
- 1/4 cup green onions, chopped
- 1/4 teaspoon ground black pepper
- vegetable oil for frying
- Grate the zucchinis and place them in a bowl. Sprinkle with salt and let them sit for about 10 minutes to draw out moisture.
- In a separate bowl, mix together the flour, water, egg, green onions, and pepper until well combined.
- Squeeze excess moisture from the zucchini and add it to the batter. Stir until everything is mixed thoroughly.
- Heat a non-stick skillet over medium heat and add a bit of vegetable oil.
- Pour about 1/4 cup of the batter for each pancake and flatten gently. Cook for 3-4 minutes on each side until golden brown.
- Transfer cooked pancakes to a paper towel-lined plate to absorb excess oil. Repeat until all batter is used.
- Serve hot with a dipping sauce of your choice.
