2 cups cottage cheese
1 cup diced apples
1/2 cup rolled oats
1/4 cup honey or maple syrup
2 teaspoons cinnamon
1 teaspoon vanilla extract
2 eggs
1/2 teaspoon baking powder
1/4 teaspoon salt
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, combine the cottage cheese, diced apples, rolled oats, honey or maple syrup, cinnamon, vanilla extract, eggs, baking powder, and salt.
Mix well until all ingredients are combined.
Pour the mixture into a greased baking dish.
Bake for 30-35 minutes or until the top is golden brown.
Allow to cool slightly before serving.
Notes
Serve warm with a dollop of Greek yogurt.
Can be stored in the refrigerator for up to 3 days.
