Healthy Raspberry Cheesecake Bars

Ingredients

  • 1 cup almonds
  • 2 cups pitted dates
  • 1 cup cashews
  • 1 cup fresh raspberries
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, blend almonds and dates until finely chopped.
  3. Press the mixture into a lined baking dish to form the crust.
  4. Blend cashews, raspberries, Greek yogurt, honey, vanilla extract, and salt until smooth.
  5. Pour the filling over the crust and spread evenly.
  6. Bake for 20 minutes, then let cool.
  7. Refrigerate for at least 2 hours before serving.

Notes

  • These bars can be stored in the refrigerator for up to a week.
  • For extra sweetness, add more honey to the filling.
